Ikan bakar (Flores Sea)
Freshly caught fish — red snapper, barracuda, grouper and coral trout from the extraordinarily rich Flores Sea and Sape Strait — marinated with shallots, turmeric, garlic, chili and lime, then grilled over coconut-husk embers. The waters surrounding the Komodo archipelago are among the most biodiverse in the Indian Ocean, and the fish quality is exceptional. Eaten at seafront restaurants and warungs in Labuan Bajo, where the morning market receives fresh catch direct from fishing boats.
Ikan kuah asam
Sour fish soup — a Manggarai and Eastern Indonesian staple of fresh fish simmered in a broth soured with belimbing wuluh (bilimbi fruit), tomatoes, lemongrass, galangal and fresh ginger. Clear, bright yellow from the turmeric and sharp from the bilimbi; the fish (typically tuna, mackerel or whitefish) poaches gently in the acidic broth. Served over steamed rice. Found at family warungs in Labuan Bajo and in villages on Flores's west coast, particularly around the Manggarai Barat area.
Daun pepaya (papaya leaf)
Young papaya leaves, blanched briefly in several changes of water to reduce their bitterness, then stir-fried with shallots, garlic, chili, shrimp paste and a small amount of coconut milk. The result is slightly bitter, earthy and fragrant — a traditional side vegetable across West Flores and the Manggarai region. The bitterness is considered cleansing and the leaves are genuinely nutritious; the technique of multi-boiling is essential to make them palatable. Served alongside rice and grilled fish at local warungs.
Rinjeng (goat preparation)
A traditional Manggarai preparation — goat meat (or chicken or pork) seasoned with galangal, lemongrass, shallots, chili and palm sugar, then slow-cooked in a sealed bamboo tube (rinjeng) placed in hot embers. The bamboo imparts a faint green-wood smokiness; the meat steams in its own juices inside the sealed tube. A ceremonial and community-feast preparation found in villages around Ruteng (Central Flores) and among Manggarai communities near Labuan Bajo; occasionally available at agrotourism spots.
Nasi jagung
Corn rice — a mixture of steamed rice and ground or dried corn kernels, sometimes with a proportion of sweet potato added. A staple of East and Central Indonesia where rice is supplemented by corn in the local diet; in West Flores and the Manggarai area, nasi jagung is the everyday carbohydrate at family meals. Starchier and slightly denser than plain rice, with a faint corn sweetness. Served as the base for all the same accompaniments: grilled fish, sambal, braised vegetables.
Liveaboard boat meals
Most Komodo visitors experience the local cuisine aboard dive liveaboards or day-charter boats, where the cook (juru masak) prepares a combination of Indonesian standards — nasi goreng, mie goreng, fresh grilled fish from the morning's market, gado-gado, tempeh and tofu, sambal and fresh fruit. The quality varies by boat; better liveaboards incorporate Manggarai dishes like ikan kuah asam and fresh local seafood. Meal times are structured around dive schedules; lunch is often eaten at anchor in a secluded bay.
Babi panggang
Whole roast pork — the Manggarai Christian tradition for feasts and celebrations. Pork marinated with turmeric, shallots, lemongrass and chili, then roasted on an open spit over wood embers for several hours. Unlike Balinese babi guling, the Manggarai version is simpler in spice profile and larger in cut; more resembles a Southeast European spit-roast. Found at Catholic-village celebrations and at a handful of pork-specialist warungs in Labuan Bajo's town centre.
Fresh seafood (Labuan Bajo market)
The daily fish market in Labuan Bajo operates from before dawn with catch from the Flores Sea and Komodo channel — lobster, squid, giant clams (kima, now mostly protected), reef fish and deep-water species not seen in Bali or Java. Restaurants along Labuan Bajo's harbour strip buy directly from the market and grill to order. Lobster at Labuan Bajo is significantly cheaper than in Bali; grilled calamari and whole barramundi are the most popular orders.
